Thrive Zesty Chicken Enchiladas by Lisa Warnick

4 c. Thrive FD Chicken
3 tsp. Thrive Chicken Bouillon
3 tsp. FD onions

Low Simmer to Bring Chicken to life. Drain

Next in Frying pan on very low heat do the following:

2 tablespoons canola oil/veg oil
1/3 cup lime juice
2 Tbsp. Chili Powder
1/4 cup finely chopped cilantro

Put chicken in Frying pan, and coat chicken in these ingredients. Chicken should absorb all flavors. Turn off heat and let stand.

6 cups Thrive FD Mozzarella Cheese-Rehydrate in cool water. Drain.

Preheat oven to 375

Mix Chicken, 3 cups Cheese, 1 can of green enchilada sauce 10oz, 1-7oz diced green chilies and 1 cup black olives finely chopped. (which is equal to one can)

1-package of Tortilla Land non-cooked Tortillas. (12)-cook lightly on each side.

Fill Tortilla’s with mixture, seam down in 9x13x2 inch baking pan.

Cover enchiladas with 2 10oz cans of green enchilada sauce and 1 cup olives diced and remainder of FD Mozzarella Cheese.

Bake for 30 minutes - 1 hour.

Serve up! Enjoy.
